Frozen chocolate banana bites filled with peanut butter are a delicious treat not only for summer. Make a large batch of these and store them in the freezer until ready to enjoy!
Cut the bananas into about ¼ inch slices (0.5 centimeters) or slightly ticker, if you like. Take one slice and spread some peanut butter over it. Cover with other banana slice and place this “banana sandwich” onto a baking parchment-lined baking sheet/or tray that will fit into a freezer. Repeat until you have used all the bananas.
Place the tray into a freezer for 30 minutes.
Melt the chocolate either over a double boiler (bain-marie) or in a microwave. Dip each banana sandwich in the melted chocolate and place it back onto the same tray. Repeat with the rest of the bites.
Transfer the bites back to the freezer until they are frozen completely.
Optional: Drizzle with melted chocolate or peanut butter.

Notes
Avoid using over-ripen bananas. The best ones are those that are harder rather than softer.
I used about ¼ to ½ teaspoon of filling per bite. You can use less or more if you like.
Dark chocolate or semisweet chocolate is perfect for this recipe.
Once frozen, keep them in an airtight container in the freezer before serving.
Note that they will “sweat” at room temperature and the chocolate can start melting if too hot.
