Have you tried a chocolate and apricot goat cheese log? This sweet and salty appetizer needs only 3 ingredients and 10 minutes. Perfect for making ahead!
In a mixing bowl, break the goat cheese with a fork. Add finely chopped dried apricots and dark chocolate. Mix everything well.
Transfer the mixture onto a plastic wrap and roll it into a sausage. Chill in the fridge for at least 1.5 hours (see note 3).
Optional: When chilled, remove the plastic wrap and roll in finely chopped chocolate and apricots (see note 5) or serve as is.

Notes
This recipe can be easily doubled.
You can reduce the amount of apricots and chocolate for a stronger goat cheese flavor.
This cheese log can be made the night before serving.
Serve with crackers, crostini, celery sticks or apple slices (highly recommended).
You might need to stick and push the apricots onto the log by hand as they tend to come off easily. You only need a little chocolate and apricots for coating the log.
