Zucchini pizza bites are the perfect snack for summer. They are easy to make and quick to prepare. Plus, these zucchini appetizers always disappear fast at any gathering.

Instructions
Preheat oven to 400 Fahrenheit (200 Celsius).
Meanwhile: Cut zucchini into about ¼ inch (0.5 centimeters) slices. Place these onto a baking tray (use at least a 10x15-inch tray) lined with baking parchment.
Season each slice with salt and black pepper. Top with a few drops of ketchup (about ¼ teaspoon) and using the back of a small spoon, spread it around. Sprinkle some oregano over and cover with a slice of cheese (a smaller slice is better than a larger one as this will melt over) and a salami.
Bake for about 4 minutes or until the cheese is melted and the zucchini is to your liking (see note 6).
Serve warm or cold (I prefer them warm).

Notes
I used a 12-ounce zucchini (340 grams), but you can use larger or smaller or double the recipe.
Ketchup works really well here and I recommend you give it a go. It’s a condiment everyone has on hand so why not! It can be substituted with pizza sauce, though.
Oregano can be substituted with dried basil or marjoram. I used about a teaspoon for 24 zucchini pizzas.
Cheese – any sliced cheese that melts well will work here. My favorites are Gouda and Mozzarella. Cut it into slightly smaller slices than the zucchini slices are. I used about 3 ounces, but you might need more/less.
Use any salami you like or have on hand – mini salami sticks, mini pepperoni, turkey sausage sticks, ...
The cooking time may vary. This will depend on your oven and the thickness of zucchini slices as well as your liking. For this reason, I recommend keeping an eye on them to avoid over-cooking them. You can also broil them for 1-2 minutes.
